SHOEI PARIS opens on 7 September 2026 at 121 Rue Saint-Honoré in the 1st: chef Hiroshi Fujii’s sushi, kappo and charcoal room, about thirty seats with eight at the counter. Hours on the first card are 12:00–14:00 and 19:00–22:30.
The little-known fact is the house. Fujii is the eldest of the family behind Matsuei — SUSHI SHOEI — founded in Nagoya in 1951 by his grandfather. He spent a decade refining Japanese cooking in Kyoto, two years as a sushi chef in Tokyo, then settled in France in 2013. The Paris years are the ones that made the booking: Plénitude, Aïda, Enyaa, and Hakuba at Cheval Blanc Paris. The 1st-arrondissement room puts French product through Japanese technique rather than importing a Tokyo omakase wholesale. Google Maps still points a different Japanese room at 276 Rue Saint-Honoré; the door to watch is 121.
