Toy opened in 2026 at 21 Rue Saint-Nicolas in the 12th, a ramen bar near Bastille from chef George Black — after three years of pop-ups between New York, Tokyo and Paris — in a collaboration with Solal Martin-Grondard of Les Œillets.
The little-known fact is the broth. Black, who cooked at Black Axe Mangal and Bright in London and at Maison in Paris, builds the bowls on smoked-eel dashi or a vegetarian stock of white miso, mushrooms and coconut oil, with thin noodles and a pork-and-shrimp wonton Le Fooding called the benchmark for Paris slurpers. Small plates and low-intervention wines sit beside the ramen; dessert is strawberry rice pudding, not mochi. Hours are Wednesday to Saturday at night, Saturday and Sunday at lunch.
