Test opened in 2026 at 70 Rue de Dunkerque in the 9th, a white-on-white room of graphic lanterns and a long marble counter, from advertiser Georges Mohammed-Chérif — also captain of Poissonnerie Kennedy — and chef Jérémy Elie Marratche, late of L’Assiette.
The little-known fact is the vitrine. Bonito heads look out from the refrigerated window at the cook; he blurs Japanese fundamentals with Sephardic fetishes, sakes and bottles that clink. Le Fooding’s Bouyaya Kitori ate raw bonito with labneh, orange blossom and preserved lemon, then a brick with a runny egg and harissa tuna belly. Dinner Tuesday to Saturday.
