Shwi opened at 60 Rue de Lancry in the 10th, along the Canal Saint-Martin, as the Kubri team’s new Lebanese grill, with Rita Higgins in the kitchen and décor by Samar Keyrouz.
The little-known fact is the iron: no Paris opening was devoted to farrouj meshwi before this one, so the chefs commissioned a bespoke grill that turns sixteen chickens in rotation after a twenty-four-hour marinade, then pulls them by hand. The brief sits between a Beirut snack bar and a New York deli, with an open kitchen, a takeaway counter, and four seats at most for a sit-down.
