SaltoBar opened on Saturday 9 May 2026 at 11 Rue Camille Crespin du Gast in the 11th, Top Chef alum Diego Alary’s first personal restaurant, with Christophe Juville, in a Ménilmontant room dressed in Portuguese azulejos and second-hand furniture around an open fire.

The little-known fact is the jump in the name: salto is the leap Alary took leaving other people’s kitchens for a tapas bar that cooks ham, sobrasada, wood-fired fish, tortilla and fideuà over flame, with cavas, vermouths and Mediterranean cocktails.
