Public opens in early September 2026 at 15 Rue Choron in the 9th: a wine bar with a gastronomic kitchen and a music programme designed to stretch the evening, in the slope of streets that run from Notre-Dame-de-Lorette up toward Pigalle.

The little-known fact is the pair behind the bar. Charley Breuvart, last at Ardent, writes a menu meant to sit with wine; Léo Algret, who came through the Peninsula Paris, holds the list. Sortir à Paris filed the opening among the rentrée’s new caves à manger; the house site says, without blinking, come in, become lips, kiss a stranger. @publicparis is the live camera — still quiet, because the room is not open yet. Rue Choron still looks straight at Sacré-Cœur if you stand in the right doorway.

The cellar is why you go; Rue Choron is why it feels like Paris.
