Les Ailes opened on the eighth floor of La Fondation at 40 Rue Legendre in the 17th, between Parc Monceau and the Batignolles village, as the panoramic dining room of the hotel.

The little-known fact is the designers: New York studio Roman & Williams set the warm room behind broad glass, with a planted terrace that stays open year-round and a 360-degree rooftop one floor up after dark. Chef Thomas Rossi, formed in Jean-François Piège’s kitchens, writes amberjack crudo with Corsican clementine vinegar and sea bream under puffed scales.
