Éthanol opened at 28 Rue Jean-Pierre Timbaud in the 11th, a hybrid wine bar and chef’s table from Maxime Bouttier of Michelin-starred Géosmine, a few streets from Oberkampf.
The little-known fact is the shell: the room occupies one of the street’s oldest cordonneries, rebuilt by the atelier d’architecture Leymarie in solid oak, terracotta tommettes, corten steel and a bay window that opens onto the sidewalk. A showpiece cellar holds the list; sharing plates run from Galician cecina to sweetbreads with capers.
