Eskal opened at 47 Rue des Mathurins in the 8th, a short walk from Saint-Lazare, as chef Alexandre Chambat’s inaugural Paris address with pastry chef Nahel Mani.

The little-known fact is the knife: guests are offered a signed Charles Canon blade whose handle is cut from seashell, a gesture that belongs to the table rather than the gift shop. Vegetables arrive hours after harvest; Chambat prefers sweet clover and meadowsweet from French fields to the usual imported spice rack, even when the plate nods to Peru or Japan.
