Dragon opened in June 2026 at 29 Rue du Dragon in the 6th, as Cyril Lignac’s hand-roll bar — a room named for the street, not a hotel annex, seven days, lunch and dinner.

The little-known fact is the brief: Lignac imagined a California-style hand roll counter in Saint-Germain, with crispy rice, flame-seared crudos and sake beside the signature cocktails. Newtable filed the opening among the latest Paris tables. The dining room is wood and seats, not a queue on the pavement.
