Carlito's

Carlito's opened at 72 Rue des Gravilliers in the 3rd, a wood-fired tapas bar in the Haut-Marais that Sortir filed as the room waking the street after dark.

The little-known fact is the fire: tapas here are built around a wood grill rather than a cold racións board, so the room smells of ember before it smells of sherry. The counter holds late; Gravilliers still reads as a workshop street once the galleries close.
