Brasserie Casel opens in September 2026 at 16 Avenue Victoria in the 1st, a few metres from the Théâtre du Châtelet: the eleventh house of La Nouvelle Garde, and the first to put aged beef at the centre of the room.

The little-known fact is the name. Antoine Casel arrived as a stagiaire at the opening of Bellanger in 2019 and never really left the group; the new brasserie carries his name as a nod to that first service. Beef, duck, pork, veal and guinea fowl rest in a fully glazed maturation cellar in the basement, visible from the dining room, on a street that was once the belly of Paris and the heart of the meat trade. Burgundy velvet curtains, Versailles parquet, olive chairs and posters of old Parisian nights pull the theatre next door onto the tables. Sortir à Paris and Newtable both filed the opening among the rentrée’s most watched openings.
