Bittikesu opened in 2026 at 5 Rue Crillon in the 4th, a ten-seat counter from chef Jules St-Cyr — Noma, 108 in Copenhagen, Ernst in Berlin — with Dylan Mota and James Gordon, named for his ancestors, on the quai de l’Arsenal side of the Marais.
The little-known fact is the garden. St-Cyr cooks from wild pickings and a plot in Montreuil, over a wood fire, behind a custom oak counter; a linen veil cuts the ten guests from the street. Le Fooding filed it in May 2026. Lunch Friday to Sunday, two evening services, closed Monday and Tuesday.
