140° opened on 27 June 2026 at 6 Rue des Petits Carreaux in the 2nd, in Montorgueil, as Belgian chef Mallory Gabsi’s fritkot — a fry shop written with the precision of a young chef rather than a fair stall.
The little-known fact is the number: 140 is the temperature of the first oil bath. The second bath finishes the chip. Gabsi, Michelin-starred and Gault & Millau’s young chef of 2023, built the room around that double cooking, Belgian mayonnaise and the Montorgueil foot traffic.
