Ushio

Ushio opened on 28 July 2026 at 12 Charlotte Street, W1, the first European door of Fukuoka’s wagyu yakiniku house. Wallpaper* walked the wood, stone and plaster room modelled on the original: 27 seats at a counter and tables, a grill within reach, tableware from Kyushu — Arita porcelain mixed with Taeko Kajihara’s Karatsu stoneware. Hot Dinners dated the 28 July door.

The little-known fact is the cut: akami done right, lean wagyu over fat, so the grill is not a splash of marbling. @wagyu_yakiniku_ushio is the live camera; ushio-london.com holds the book.
