Ume İst is a chef-led cocktail address in Firuzağa, on the Beyoğlu slope at Firuzağa, Beyoğlu, Istanbul, where narrow streets still decide how early a room fills.

The useful fact is the format itself: a modern gastro bar that treats shareable plates as part of the drink service rather than an afterthought, so the counter stays coherent from first round to last.
