Philipp Prinzbach, the head chef of Maison Dunand, took the first residency with a four-course Culinary Passport at B2,400++ — you pick a scented black box instead of reading a list, and the kitchen cooks the route that scent suggests.

The little-known fact is the number on the door: 1749 is the street address, not a vintage, and the room is built so the next chef can walk in when Prinzbach’s chapter closes. Friday Bangkok filed the debut on 12 March. Reservations run through Line @turtle23; service is Thursday to Monday from 18:00.
