Quilombo

Quilombo opened in early 2026 at 105/2 Thonglor Soi 5, Khlong Tan Nuea, Watthana, inside the castle that has already been a bar, a club and a rumour. Chef Ferran Tadeo cooks; Christopher Mark and Manuel Palacio own the room. Chomp Magazine’s February sitting traced Tadeo through exacting European kitchens, El Bulli among them, then watched the brief shrink to three words: fire, beef, wine. Grass-fed cuts dry-age in house for at least twenty-one days and hit a charcoal parrilla. Empanadas are hand-folded. Chorizo criollo, a crab-and-avocado salad, chimichurri and salsa criolla sit around the grill rather than a tasting menu. The cellar leans Argentine. Chomp sat it in February; Time Out filed Thong Lor on 9 March; BK Magazine returned on 16 June and found a steakhouse that wanted to be fun again, not another hushed temple. The little-known fact is the building. Two floors of reclaimed stone, interiors by Barcelona studio MTM, about eighty seats including a concealed private room. Previous lives of the castle include Blue Velvet and Castle Bar; this is the first time the stone has been asked to do a parrilla. Thonglor Soi 5 is a numbered alley off Sukhumvit 55, not a hidden courtyard, which is why a steakhouse in a fake castle actually gets walked into twice: once for the building, once for the rib. @quilombobangkok is the live camera for the week’s cuts and whether lunch has started.
