Bánh Mimi opened in March 2026 on the G floor of Siam Paragon at 991/1 Rama I Road, the latest Vietnamese room from iBerry Group after An Com An Ca and Slay Yuan. Chalee Kader helped write the board: a crisp-crust bánh mì that stays airy inside, and a phở built for the mall’s all-day traffic rather than a late-night bowl in a shophouse.
The little-known fact is the brief — this is a grab-and-go Vietnamese line inside Gourmet Eats, not a replica of a Saigon alley, which is why the baguette is the argument and the room stays bright enough to read a receipt.
