Trio opened in mid-May 2026 at Sismani 18 in Neos Kosmos, a short walk from the Menaichmou stretch of Amore and Epta Martyres, from Nikolas Dais, Michalis Christou and Ektoras Liatsos — bartender, host and Papaiouannou dancer behind the same 8.5-metre idea of a neighborhood bar.

The little-known fact is the volume: music stays low for the residents of the modernist block above, and most of the tables sit outside, spilling onto the church steps when the room fills. Panagiotis is not here — that is Diethnes — but the drinks are classic and sharp: dry martini, Bloody Mary, strawberry Margarita with a pepper finish, espresso martini that refuses the city’s sugar, plus Greek wine and three microbrewery beers. Food is a grilled-cheese, tomato-and-anchovy toast, tuna melt, a small cheese plate and chips with taramosalata.
