Amphibian opened on 22 January 2026 on the sixth and seventh floors of Onassis Stegi at 107–109 Syngrou Avenue, the cultural house in Neos Kosmos where Tasos Mantis once ran Hytra.

The little-known fact is the return: Mantis, with Alex Mouridis and the Soil team, comes back to the same rooftop two years after Hytra left, this time with an à la carte kitchen that moves between land and sea rather than a tasting-menu fortress. Reservations run through +30 210 924 5401; the house says walk-ins are welcome most nights from 19:00.

Athinorama and Andro filed the opening in the 2026 new-tables roundup. @amphibian.restaurant is the live camera for hours. The view is why you go; Syngrou is why it feels like Athens.
